Watermelon is a favorite go to fruit in our household. It’s a perfect snack on any day, whether it is hot or cold outside, and it is very refreshing. For several years I have made my family a nice lime mint watermelon that would be gobbled up in seconds and lately I have added more spices and herbs into our rotation. So, today as I prepped for my family’s afternoon snack I decided to mix up our traditional lime mint watermelon by adding freshly grated ginger. It gives the watermelon lime mint a nice refreshing taste with a slight kick. The ginger will help with any tummy problems, cold or flu germs my daughters may have picked up from school because it is the cold, flu, allergy season right now. I encourage you to add this simple recipe to your rotation and feel free to add more ginger to your mix and help fight off any yucky bugs that might be floating around.

Ginger Lime Mint Watermelon

Yield: Serves 6-8 Total Time: 15 minutes
Ingredients:
-1 Seedless Watermelon
-2/3 oz. of Fresh Mint
-Fresh Ginger
-4-6 Limes
Equipment Needed:
-Peeler
-Cutting Board
-Knife
-Juicer
-Grater
-Measuring Spoon
-Large Glass Bowl/Glass Jar for Storing
-Spatula
Prep:
– Rinse fresh mint bundle and remove long stems, finely chop fresh mint, set fresh
mint aside
– Slice 4 limes, juice 4 limes with a juicer, set lime juice aside (add more limes
depending on the size of the watermelon)
– Peel a medium piece of fresh ginger, grate peeled ginger, set aside grated ginger
– Slice 1 seedless watermelon into diagonal cubes and place in large bowl
– Finely chop the fresh mint and set aside
Directions:
– Pour 1 teaspoon of grated ginger into the lime juice and mix
– Pour the grated ginger lime juice mix onto the sliced watermelon
– Sprinkle the finely chopped fresh mint onto the sliced watermelon and mix
– Serve
