Today is the last day of school for my princesses, Madison and Lexie, and all I can think about is relaxing by the water and sipping on a nice cold drink. With summer around the corner there is a huge supply of watermelons and what better ingredient to add to a mimosa. I combined freshly squeezed blood orange juice with watermelon and infused fresh basil into the mix to develop the watermelon blood orange basil mimosa. I simply added my favorite champagne and poured and enjoyed. You could skip the champagne and make this as a mocktail for the kiddos, so they could feel very tres chic as my daughters say. It is a great twist on a classic mimosa that can be enjoyed in the dog days of summer.

Watermelon Blood Orange Basil Mimosa
Watermelon Blood Orange Basil Mimosa
Yield: Serves 4-6 Total Time: 15-30 minutes
Ingredients:
– 1 Bottle Champagne
– 2 Small Seedless Watermelons or 1
Large Seedless Watermelon
– 4 Blood Oranges
– 6 Sprigs of Fresh Basil
Equipment Needed:
– Juicer
– Cutting Board
– Knife
– Large Pitcher
– Blender
– Colander
– Champagne Glasses
– Spatula
Prep & Directions
– Rinse fresh sprigs of basil and set aside
– Slice 4 blood oranges, juice 4 blood oranges with a juicer, set blood orange juice
aside
– Slice 2 small seedless watermelons (or 1 large seedless watermelon) into diagonal
cubes and place in blender, blend until smooth
– Get a colander and place on top of pitcher
– Pour watermelon juice through the colander to remove any pulp, discard pulp
– Pour the blood orange juice from 4 blood oranges into the pitcher with watermelon
– Mix the watermelon and blood orange juice together with a spatula
– Get champagne glasses and pour chilled champagne about ½ way into the
champagne glass
– Pour watermelon blood orange juice into the champagne and fill just under the brim
– Put a sprig of fresh basil in the champagne glass
– Repeat the process until finished
– Serve
